Cajamarca

Cajamarca is the most important city of the North mountain range of Peru and it's known as "the capital of the Peruvian carnival" for having one of the biggest carnival of the country. The city has an architectural and archeological wealth that dates from the colonial and the conquest periods. It was the scene of the capture of the last inca, Atahualpa, by the spanish people, and that was a key episode in Peru's History, because it marked the end of the Inca's Empire. Cajamarca stands out for its milk production, which is crucial for the development of local economy. The most recognised products derivative from the milk are the cheeses, butter, and the "manjar blanco" (a sweet creamy desert with canel and lemon peel). From February to March, the city turns into the "land of carnival", joining locals and visitors for the festivities of the Cajamarca's carnival. Inside the city, the Cathedral opens the doors to the visitors that look for learning more about the History and the architecture of the colonial period. The Granja Porcón is a tourist attraction you can visit on the outskirts of the city. There the visitor can feel a participatory experience in the farming life of Cajamarca; besides you can make trekkings along the woods and slopes.
